This guy (red Silverado crew cab) stopped less than 6 inches from our bumper every. Single. Time. He only backed off when I whipped out my phone

I feel your pain. I get flipped off at for driving the speed limit on a residential road.

When that happens to me I just get flustered because I might roll back on hill starts, and OF COURSE it's my fault if I hit him.

When this happens, I just pop it in neutral, rev a bit, jerk the car around, then put on my hazards. Basically pretend I can't drive stick. Because they're so close, they can't go around.
Or even better (so long as you're on a side street, not on a major road) — get out and pop your hood, then look a bit confused.

Blow them kisses. They love that.

Trust me, I've had enough practice.
Dat stop/go uphill traffic

I sometimes give them an overly optimistic thumbs up and sometimes speed off depending on the situation.

It's not even just people in manuals that roll back. Autos will roll if the hill is steep enough.
When that happens I make sure I use the handbrake as an extra precaution. Normally I wouldn't but if the hill is steep enough and car behind me is close enough I don't trust me or the hill assist feature on my WRX.

Yeah, some people are really inconsiderate that way.
